Chocolate Dates Snickers

These chocolate-covered dates, filled with Snickers-inspired ingredients, are made with whole, natural foods and offer a delicious alternative to a traditional Snickers bar. They are both vegan and gluten-free.

Ingredients

  • 10 Medjool dates
  • 2 tablespoons of peanut butter
  • ¼ cup of chopped or crushed peanuts
  • ½ cup of dairy-free dark chocolate chunks or chocolate chips
  • 1 teaspoon of coconut oil

Instructions

  • Begin by making a slit in each date and removing the pit. Fill each date with approximately ½ teaspoon of peanut butter and a sprinkle of crushed peanuts. Set the dates aside.
  • In a microwave-safe bowl, combine the dark chocolate and coconut oil. Heat in the microwave in 15-second intervals, stirring in between, until fully melted—this should take 1-2 minutes in total.
  • Using a toothpick, dip each date into the melted chocolate, then use a spoon to coat it completely. Arrange the chocolate-covered dates on a parchment-lined platter and sprinkle the remaining crushed peanuts on top.
  • Refrigerate the dates to allow the chocolate to set. Store any leftover chocolate-covered dates in a sealed container in the fridge for up to a week.

Notes

  • For those with a peanut allergy, any nut butter and nut can be used as a substitute.
  • For a single-serving treat, use 1 date, ½ teaspoon of nut butter, 1 teaspoon of crushed peanuts, and approximately 1 tablespoon of melted chocolate.
