- 10 Medjool dates
- 2 tablespoons of peanut butter
- ¼ cup of chopped or crushed peanuts
- ½ cup of dairy-free dark chocolate chunks or chocolate chips
- 1 teaspoon of coconut oil
Begin by making a slit in each date and removing the pit. Fill each date with approximately ½ teaspoon of peanut butter and a sprinkle of crushed peanuts. Set the dates aside.
In a microwave-safe bowl, combine the dark chocolate and coconut oil. Heat in the microwave in 15-second intervals, stirring in between, until fully melted—this should take 1-2 minutes in total.
Using a toothpick, dip each date into the melted chocolate, then use a spoon to coat it completely. Arrange the chocolate-covered dates on a parchment-lined platter and sprinkle the remaining crushed peanuts on top.
Refrigerate the dates to allow the chocolate to set. Store any leftover chocolate-covered dates in a sealed container in the fridge for up to a week.
