Ingredients

  • 2 English cucumbers diced
  • 5 large Roma tomatoes sliced
  • ¼ to ½ cup chopped parsley about half a bunch
  • 1 medium red onion thinly sliced
  • Juice of 1 medium lemon freshly squeezed
  • ¼ cup extra virgin olive oil
  • ½ teaspoon black pepper
  • ¼ teaspoon salt

Instructions

  • Rinse the cucumbers, tomatoes, onions, and parsley under cold water.
  • Dice the tomatoes, slice the cucumbers and onions, and finely chop the parsley.
  • Place all prepared ingredients into a large bowl. Add salt, black pepper, lemon juice, and olive oil.
  • Gently toss until everything is evenly combined. Season to taste, if needed.
  • Cover and refrigerate for about 30 minutes before serving.
