- 2 English cucumbers diced
- 5 large Roma tomatoes sliced
- ¼ to ½ cup chopped parsley about half a bunch
- 1 medium red onion thinly sliced
- Juice of 1 medium lemon freshly squeezed
- ¼ cup extra virgin olive oil
- ½ teaspoon black pepper
- ¼ teaspoon salt
Rinse the cucumbers, tomatoes, onions, and parsley under cold water.
Dice the tomatoes, slice the cucumbers and onions, and finely chop the parsley.
Place all prepared ingredients into a large bowl. Add salt, black pepper, lemon juice, and olive oil.
Gently toss until everything is evenly combined. Season to taste, if needed.
Cover and refrigerate for about 30 minutes before serving.
