INGREDIENTS NEEDED FOR BANANA BREAD OVERNIGHT OATS

Old fashioned rolled oats – Rolled oats work best because they soak up the liquid and become soft and creamy. Instant oats can turn mushy, and steel cut oats stay too firm.

Bananas – Mashed bananas give these oats their natural sweetness and true banana bread flavor.

Almond milk – Unsweetened vanilla almond milk adds a light sweetness, but any milk you have at home will work.

Greek yogurt – Yogurt makes the oats thick and creamy while adding protein. Plain Greek yogurt keeps the sugar low. For a dairy-free version, use plant-based yogurt or replace it with a little extra milk.

Maple syrup – Pure maple syrup blends easily into the mixture and adds natural sweetness. Honey or another liquid sweetener can also be used. If you prefer less sugar, a sugar substitute works as well.

Vanilla extract and almond extract – These add extra flavor. The almond extract is optional, but it gives a taste similar to baked banana bread.

Sea salt – A small pinch helps balance the sweetness and brings out the oat flavor.

Cinnamon – Adds a warm, mild spice.

Walnuts – Chopped walnuts add crunch and make the oats feel more like traditional banana bread.

WHY THESE OATS TASTE SO GOOD

One of the best things about overnight oats is how the flavors blend together as they sit in the fridge. The oats absorb the milk, banana, and sweetener, creating a smooth and balanced taste. Adding vanilla, banana, and a touch of almond extract gives a flavor that feels close to freshly baked banana bread. Cinnamon is optional, but it adds warmth and depth.

Ingredients

  • 2 ripe bananas mashed until smooth
  • 1 cup old fashioned rolled oats
  • 1 cup unsweetened almond milk or any milk you prefer
  • ½ cup plain Greek yogurt or dairy-free yogurt
  • 1 teaspoon pure maple syrup
  • ½ teaspoon vanilla extract
  • ½ teaspoon almond extract
  • Small pinch of sea salt
  • Small pinch of cinnamon optional
  • 1 –2 tablespoons chopped walnuts

Optional Toppings

  • Fresh banana slices
  • Extra maple syrup
  • Nut butter of choice

Instructions

  • In a jar or airtight container, add the mashed bananas, rolled oats, milk, yogurt, maple syrup, vanilla, almond extract, salt, and cinnamon if using. Stir well until everything is fully mixed.
  • Close the container with a lid and place it in the refrigerator for at least 2 hours, but overnight is best for the right texture.
  • The next day, take the oats out of the fridge and give them a good stir. The oats will have absorbed most of the liquid and become thick and creamy. If the mixture feels too thick, add a small splash of milk and stir again until you reach the texture you like.
  • Add chopped walnuts on top along with any other toppings you enjoy. Serve cold straight from the jar.

Notes

  • Keep the oats in a sealed container in the refrigerator for up to 5 days. This makes them a simple option for meal prep and busy mornings.
