Ingredients

  • 2 boneless skinless chicken breasts (about 1 lb total)
  • 2 teaspoons olive oil
  • 2 teaspoons apple cider vinegar
  • ½ teaspoon Dijon mustard
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon garlic powder
  • 2 teaspoons Italian seasoning

Instructions

  • In a small bowl, whisk together the olive oil, apple cider vinegar, and Dijon mustard to make a simple marinade. Set aside.
  • In another small bowl, combine the salt, pepper, garlic powder, and Italian seasoning.
  • Place the chicken breasts in a shallow dish. Pour the marinade over the chicken and rub the seasoning mixture on both sides evenly.
  • Preheat the air fryer if needed. Add the chicken breasts to the air fryer basket.
  • Cook at 375°F for 18–22 minutes, flipping once halfway through. Use a meat thermometer to ensure the internal temperature reaches 165°F. Cooking time may vary depending on the size of the chicken breasts.
  • Once cooked, remove the chicken from the air fryer and let it rest for 5–10 minutes before serving.

Notes

  • Refrigerator: Let chicken cool completely, then store in an airtight container for 3–4 days.
  • Freezer: Portion the chicken and freeze for up to 3 months. Thaw in the fridge for 24 hours before use for best results.
