Ingredients

  • 1 lb salmon about 4 fillets
  • 2 teaspoons olive oil
  • 1 tablespoon lemon juice
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • cup grated Parmesan cheese
  • 1 teaspoon basil fresh or dried
  • 1 teaspoon parsley fresh or dried
  • ½ teaspoon garlic powder
  • Lemon slices for serving

Instructions

  • Heat the oven to 400°F (200°C). Line a baking tray with parchment paper or foil for easy cleanup.
  • Place the salmon fillets on the tray, skin side down. Pat them dry first. Drizzle olive oil and lemon juice over the top, then season with salt and pepper.
  • In a small bowl, mix Parmesan cheese, basil, parsley, and garlic powder until well combined.
  • Spoon the mixture evenly over each salmon piece. Press it gently so it sticks well to the surface.
  • Bake for about 10–12 minutes, or until the salmon is cooked through and flakes easily with a fork. For a crispier top, broil for 1–2 minutes at the end. (Use foil if broiling instead of parchment.)
  • Serve warm with fresh lemon slices on the side.

Notes

  • STORAGE: Leftover salmon can be stored in a sealed container in the refrigerator for up to 3 days. To help keep the topping from softening, a paper towel can be placed inside the container to absorb extra moisture.
  • REHEATING Warm leftovers in the oven at 350°F (175°C) for about 10 minutes until heated through. An air fryer at 325°F (160°C) for 5–7 minutes also helps bring back some crispness in the topping.
  • Microwaving is not recommended, as it can change the texture and make the salmon less tender.
