BBQ Chicken Salad

This BBQ chicken salad is a tasty and filling meal, made with smoky grilled BBQ chicken, black beans, sweet corn, creamy avocado, crunchy tortilla chips, and a drizzle of ranch dressing. It’s great for a protein-rich lunch or a quick weeknight dinner!

Ingredients

  • 2 –3 grilled BBQ chicken breasts chopped
  • 6 cups chopped romaine lettuce
  • 1 15 oz can black beans, drained and rinsed
  • 1 cup sweet corn frozen or fresh and grilled
  • 1 cup chopped cherry tomatoes
  • ½ cup diced red onion
  • 1 –2 avocados sliced
  • ½ cup shredded Monterey Jack or cheddar cheese
  • ½ cup crushed tortilla chips optional
  • BBQ sauce for drizzling (homemade or store-bought)
  • Ranch dressing homemade or store-bought

Instructions

  • If not done already, cook the grilled BBQ chicken and chop into bite-sized pieces.
  • In three serving bowls, layer 2 cups of chopped romaine lettuce each.
  • Top the lettuce with chopped grilled BBQ chicken, black beans, corn, cherry tomatoes, red onion, avocado slices, and shredded cheese.
  • Drizzle ranch dressing over each salad, and add BBQ sauce if desired.
  • Sprinkle crushed tortilla chips on top for crunch, if using, and serve immediately.

Notes

Storage: Store leftover ingredients in the fridge separately for 3–4 days to keep everything fresh and crisp. Add avocado and tortilla chips just before serving to maintain the best texture.
