Ingredients

  • ½ cup old-fashioned rolled oats
  • 1 teaspoon chia seeds
  • 1 tablespoon vanilla protein powder
  • ½ to 1 teaspoon lemon zest
  • ¼ cup plain full-fat Greek yogurt or dairy-free yogurt
  • ¾ cup milk of choice such as almond milk
  • A small pinch of salt
  • ½ teaspoon maple syrup
  • ¼ cup blueberries plus extra for topping
  • Optional toppings: granola extra blueberries, nut butter

Instructions

  • In a jar or any container with a lid, add the oats, milk, yogurt, protein powder, maple syrup, chia seeds, blueberries, lemon zest, and a pinch of salt. Stir everything well until fully combined.
  • Close the container and place it in the refrigerator. Let the mixture rest overnight so the oats can soften and absorb the liquid. If needed, the soaking time can be reduced to about 2 to 4 hours.
  • When ready to eat, take the container out of the fridge and stir the oats again. If the texture feels too thick, add a small amount of milk and mix until it reaches the desired consistency.
  • Add any preferred toppings such as granola, more blueberries, or nut butter. The oats can be enjoyed directly from the jar or transferred to a bowl before serving.
  • Blueberry lemon overnight oats can be stored in a sealed container in the refrigerator for up to 5 days. The texture may become softer over time as the oats continue to absorb liquid.
