Ingredients

  • 1 cup old-fashioned rolled oats avoid instant oats
  • 1 cup unsweetened vanilla almond milk
  • 1/2 cup plain Greek yogurt
  • 2 teaspoons maple syrup
  • 1 teaspoon chia seeds
  • 1/2 teaspoon vanilla extract
  • Pinch of sea salt
  • 2 tablespoons chocolate chips divided
  • 1/2 tablespoon smooth peanut butter for drizzling

Instructions

  • In a mixing bowl, combine the rolled oats, almond milk, Greek yogurt, maple syrup, chia seeds, vanilla extract, sea salt, and 1 tablespoon of the chocolate chips. Stir everything together until well mixed.
  • Divide the oat mixture evenly between two small containers or jars. Seal each container with a lid and place them in the refrigerator. Let the oats chill and soften overnight.
  • The next morning, remove one jar from the fridge and give the oats a quick stir.
  • Sprinkle the remaining chocolate chips on top and finish with a light drizzle of peanut butter. Serve and enjoy.
  • Store any remaining jars in the refrigerator. The oats stay fresh for up to 5 days when kept in a sealed container.

Notes

  • Optional variation: For extra flavor and natural sweetness, mashed banana can be mixed into the oats before chilling. This adds a creamy texture and a mild fruity taste.
