In a mixing bowl, combine the rolled oats, almond milk, Greek yogurt, maple syrup, chia seeds, vanilla extract, sea salt, and 1 tablespoon of the chocolate chips. Stir everything together until well mixed.
Divide the oat mixture evenly between two small containers or jars. Seal each container with a lid and place them in the refrigerator. Let the oats chill and soften overnight.
The next morning, remove one jar from the fridge and give the oats a quick stir.
Sprinkle the remaining chocolate chips on top and finish with a light drizzle of peanut butter. Serve and enjoy.
Store any remaining jars in the refrigerator. The oats stay fresh for up to 5 days when kept in a sealed container.
