Preheat the oven to 400°F. Toss the cubed sweet potatoes with oil, salt, pepper, and garlic powder. Spread them evenly on a baking sheet and roast for about 20 minutes, flipping halfway through. For extra crispiness or a quicker option, the sweet potatoes can also be cooked in an air fryer.
While the sweet potatoes roast, heat a skillet over medium-high heat. Add the ground beef, breaking it apart with a spatula. Cook until browned and fully cooked, about 6–7 minutes. Stir in taco seasoning. If the beef seems dry, add a small amount of water to keep it moist.
Divide the roasted sweet potatoes into four bowls. Add the cooked ground beef on top. Spoon cottage cheese over each bowl, then add diced avocado. Drizzle with hot honey and a little hot sauce. Finish with optional pickled onions or jalapeños for extra flavor. Mix before eating for the best taste.
