Ingredients

  • 2 cups old-fashioned rolled oats
  • ¼ cup pure maple syrup
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • ½ teaspoon sea salt
  • 2 cups non-dairy milk any kind
  • 1 large egg or 1 tablespoon ground flaxseed mixed with 3 tablespoons water
  • 2 tablespoons melted coconut oil
  • 2 teaspoons vanilla extract
  • 2 ripe bananas 1 mashed, 1 sliced
  • 1 ½ cups fresh strawberries quartered (divided)
  • ¼ cup chocolate chips divided
  • Cooking spray
  • Extra strawberries banana slices, and milk for serving

Instructions

  • Preheat the oven to 375°F (190°C).
  • Spray an 8-inch square baking dish with cooking spray.
  • In a large bowl, combine the oats, baking powder, cinnamon, and salt.
  • Stir in the milk, maple syrup, egg (or flaxseed mixture), melted coconut oil, vanilla, and mashed banana until fully mixed.
  • Gently fold in 1 cup of strawberries, half of the banana slices, and ⅛ cup of chocolate chips.
  • Transfer the oatmeal mixture to the prepared baking dish.
  • Scatter the remaining strawberries, banana slices, and chocolate chips evenly on top.
  • Bake for 50–60 minutes, or until the center is mostly set. It may look slightly moist due to the strawberries, which is normal. The edges and top should turn golden.
  • Let the baked oatmeal cool for a few minutes before slicing. Serve warm with extra fresh strawberries, banana slices, and a splash of milk.

Notes

  • STORAGE: Keep leftovers in an airtight container in the fridge for 4–6 days.
  • REHEATING: Heat individual portions in the microwave for about 1 minute, or warm in a 350°F oven for 5–10 minutes. Add extra milk if desired.
