Ingredients

  • 1 ½ cups whole wheat pastry flour or all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 2 eggs
  • ¼ cup avocado oil
  • ¾ cup pure maple syrup or granulated sugar
  • 2 tablespoons fresh lemon juice
  • ½ tablespoon lemon zest
  • ¾ cup full-fat Greek yogurt

LEMON GLAZE INGREDIENTS

  • ¾ cup powdered sugar
  • 2 tablespoons fresh lemon juice

Instructions

  • Preheat oven to 350°F (180°C). Line a loaf pan with parchment paper or grease it lightly.
  • In a bowl, combine flour, baking powder, baking soda, and salt. Set aside.
  • In a large bowl, whisk eggs, avocado oil, maple syrup, lemon juice, lemon zest, and Greek yogurt until smooth.
  • Add dry ingredients into wet ingredients. Stir gently until just combined. Do not overmix.
  • Pour batter into the loaf pan. Bake for 40–45 minutes, or until a toothpick comes out clean. Let cool 10–15 minutes, then transfer to a rack to cool completely.
  • Mix powdered sugar and lemon juice until smooth.
  • Drizzle glaze over cooled loaf. Slice and serve.

Notes

  • This recipe has not been tested with egg substitutes. A flaxseed egg may work, but the lemon loaf cake could turn out a bit different in texture and may not rise as much.
  • Whole wheat pastry flour gives the softest texture for this lemon loaf recipe, but all-purpose flour is also a good option and works well.
  • Store the lemon loaf in an airtight container at room temperature for 3–4 days, or in the refrigerator for up to 5–7 days. For longer storage, freeze sliced pieces for up to 3 months. Thaw before serving.
