  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 2 cups cottage cheese full-fat or low-fat
  • 3 large eggs
  • ¼ cup melted unsalted butter or avocado oil
  • 2 tablespoons maple syrup
  • 2 teaspoons vanilla extract

Instructions

  • Preheat the waffle iron to a medium-high setting and lightly grease it if needed.
  • In a small bowl, combine the flour, baking powder, and cinnamon. Mix well to distribute evenly.
  • In a blender, add the cottage cheese, eggs, melted butter or oil, maple syrup, and vanilla. Blend until the mixture becomes smooth and creamy.
  • Pour the blended mixture into the bowl with the dry ingredients. Stir gently until just combined, making sure not to overmix. Let the batter rest for a few minutes so it can thicken slightly.
